The Amethyst Sea Holly (Eryngium amethystinum) is a flowering perennial tap-rooted herb in the Apiaceae family. It is also known as the Amethyst Eryngo or Italian Eryngo.

It is native to the eastern Mediterranean. 

It grows to 30-50 centimetres (12-20 inches) tall. Its flowers are light blue to purple, and its leaves are spiny and leathery. 

The Amethyst Sea Holly blooms in mid-summer to late summer.
